Peri-peri prawns with onion disco fries
Ingredients
- 250 g Woolworths battered onion rings
- 500 g Woolworths crinkle cut chips
- 1 cup mature cheddar cheese
- salt and pepper
- 750 ml Ayrshire milk
- 60 ml flour
- 60 ml butter
- 2 tbsp parsley, chopped
- lemons, to serve
- 1 kg Woolworths easy to peel prawns
- 4 tbsp butter
- salt and pepper
- 2 T beetroot powder
- 500 ml Canola oil
- 500 ml tomato puree
- 2 tbsp tomato paste
- 2 tsp red chilli powder
- 1 tbsp chopped chilli, deseeded
- 2 garlic clove
- 1 medium onion, finely chopped

Cooking Instructions
To make the peri-peri prawns:
- Sauté 1 finely chopped onion until translucent.
- Add 2 cloves of garlic, 1 tbsp chopped chilli and 2 tsp chilli powder.
- Sauté for a minute.
- Add 2 tbsp tomato paste, 500 ml passata (purée tomatoes) and 2 tbsp sugar.
- Simmer for 5 minutes.
- Add 125 ml cream, season to taste then simmer for another 5 minutes.
- In another pan melt 2 tbsp butter.
- Toss in 1 kg Woolworths easy to peel prawns and stir-fry for 5 minutes.
- Season with salt and pepper
- Add the peri-peri sauce.
- Simmer over high heat until prawns are cooked through.
- Squeeze over some lemon juice, stir in the 2 tbsp chopped parsley then serve immediately with extra lemon wedges.
To make the onion disco fries:
- Melt 60 ml butter in a pot.
- Stir through 60 ml flour.
- Add milk bits at a time while whisking over a medium heat.
- Stir until thickened.
- Leave to simmer for 2 minutes over low heat.
- Stir in the 1 cup mature cheddar cheese
- Season with salt and pepper to taste.
- Cook the 500 g crinkle cut chips and the 250 g beer battered onion rings in the oven as per the packet instructions.
- Serve on a platter with peri-peri prawns.
