Nut crusted pork chops

Ingredients

  • salt and pepper
  • olive oil
  • 2 tbsp white balsamic vinegar
  • 1/2 red onion, sliced
  • 2 oranges, segmented
  • 250 g ripe strawberries, sliced
  • 100 g baby spinach
  • 60 g Butter
  • 6 tbsp olive oil
  • 4 pork chops
  • 2 tsp Dijon mustard
  • salt and pepper
  • 1 tbsp fresh sage, chopped
  • 4 tbsp parmesan cheese, grated
  • 1 1/2 cups ground almonds

Cooking Instructions

  1. Mix together the almonds, parmesan, sage and seasoning.
  2. Brush the pork chops with mustard, then coat with the nut mixture, pressing well to make sure the coating sticks.
  3. Heat butter and oil in a pan, then cook the pork chops until golden on both sides, then place into the oven to finish cooking though.
  4. Toss together the salad ingredients then serve with the hot pork chops.
