Nut crusted pork chops

Ingredients
- salt and pepper
- olive oil
- 2 tbsp white balsamic vinegar
- 1/2 red onion, sliced
- 2 oranges, segmented
- 250 g ripe strawberries, sliced
- 100 g baby spinach
- 60 g Butter
- 6 tbsp olive oil
- 4 pork chops
- 2 tsp Dijon mustard
- salt and pepper
- 1 tbsp fresh sage, chopped
- 4 tbsp parmesan cheese, grated
- 1 1/2 cups ground almonds

Cooking Instructions
- Mix together the almonds, parmesan, sage and seasoning.
- Brush the pork chops with mustard, then coat with the nut mixture, pressing well to make sure the coating sticks.
- Heat butter and oil in a pan, then cook the pork chops until golden on both sides, then place into the oven to finish cooking though.
- Toss together the salad ingredients then serve with the hot pork chops.
