Caramelized banana split sundae

Ingredients

  • honey, to taste
  • chocolate sauce, to serve
  • chocolate ice cream, to serve
  • 1 tbsp pecan nuts, chopped
  • vanilla ice cream, to serve
  • 2 Bananas, split lengthways
  • 2 tbsp golden syrup
  • 2 tbsp Demerara sugar
  • 4 tbsp Butter
  • 2 tbsp fat-free plain yoghurt
  • 100 g dark chocolate, roughly chopped
  • 100 ml Ayrshire milk

Cooking Instructions

  1. Heat milk in a pot, then add the chocolate and stir until melted, remove from the heat, stir in the honey and yoghurt, then set aside.
  2. Place butter, Demerara and syrup in a pan, and heat until butter melts and sugar dissolves.
  3. Place banana, cut side down into the pan and leave to caramelize for 2 minutes before turning over.
  4. Serve Bananas in bowls, topped with the ice cream and drizzled with the chocolate sauce, sprinkle with nuts to garnish.
