Taco trio

Ingredients

  • multiseed wraps
  • limes, for serving
  • multiseed wraps
  • 3 tbsp coriander, roughly chopped
  • 1/2 cup mayonnasie
  • 4 tbsp hot chunky salsa
  • 2 rainbow carrots, grated
  • 1/2 red cabbage, finely shredded
  • 1 Woolworths Gammon from the festive hamper, prepared as instructed before thinly slicing
  • lime to squeeze over
  • avocado to top the tacos
  • 2 tbsp Tabasco chipotle
  • 4 tbsp BBQ marinade
  • 3 tbsp peppadew peppers, chopped
  • 5 gherkins, diced
  • 1 red onion, finely diced
  • 1 beef, cured
  • lime wedges, for serving
  • Woolies multiseed wraps
  • 1 cup extremely creamy woolies mayonnaise
  • 2 tbsp chipotle seasoning
  • 1 tbsp jalapeno sauce
  • 4 tbsp mild jalapeno chutney
  • 4 tbsp coriander, roughly chopped
  • 2 carrots, julienned
  • 1/2 red onion, finely diced
  • 1 tongue, prepared from the Woolworths festive hamper

Cooking Instructions

To make the Tongue twister taco:

  1. Dice the prepared tongue and add to a mixing bowl along with the 1/2 finely diced red onion.
  2. In a separate bowl combine the 2 julienned carrots, 4 tbsp roughly chopped coriander,  4 tbsp jalapeno and coriander chutney and 1 tbsp jalapeno sauce.
  3. Add the carrot mixture to the bottom of the toasted wrap
  4. Add the tongue mixture next followed by the a chipotle mayo which is simply made by mixing 2 tbsp chipotle seasoning together with the 1 cup of mayonnaise.
  5. Serve with a squeeze of lime over.

To make the Smokey beef and pickle taco:

  1. Prepare the cured beef as instructed before shredding.
  2. Combine the beef with the 1 red onion,5 diced pickles and 3 tbsp chopped pepperdews before adding the 4 tbsp smokey BBQ marinade and 2 tbsp chipotle Tabasco.
  3. Mix through before adding to the wrap and topping with the avo.
  4. Serve with a squeeze of lime. 

To make the Gammon and slaw taco:

  1. Prepare gammon as instructed.
  2. Slice thinly and combine slaw ingredients (1/2 finely shredded Woolworths red cabbage, 2 grated rainbow carrots, 4 tbsp hot and chunky salsa, 1/2 cup good quality mayonnaise, 3 tbsp roughly chopped coriander) .
  3. Top wrap with gammon and follow by slaw.
  4. Give it a squeeze of lime and serve.
  5. Add the gammon to the wrap and top with the slaw before adding a squeeze of lime.
