You need to try these three brilliant braaibroodjies

From a good old classic to a version wrapped in bacon (we kid you not), these delicious braaibroodjies will take your braai to the next level.
  • Abi’s ultimate braaibroodjies

    Everyone has their own secret ingredient for their version of the perfect braaibroodjie. TASTE's food director, Abigail Donnelly, has three! She seasons hers with white pepper and onion powder, and mixes mayo with the butter spread on the outside of the bread. The result is a braaibroodjie bursting with flavour with a really good crunch.

    Ingredients:

    • 8 slices white bread
    • 1 cup cheddar cheese, grated
    • 1 cup mozzarella cheese, grated
    • 8 slices tomato
    • 8 onion, slices
    • White pepper, to taste
    • Onion salt, to taste
    • 6 T butter, softened
    • 4 T good quality mayonnaise

    Method:

    1. Divide the cheese between four slices of bread, then top the cheese with the tomato and onion.
    2. Season with white pepper and onion salt. Top with the remaining slices of bread.
    3. Butter the outside of the sandwiches, then spread with mayo.
    4. Place in a braai sandwich grid and cook over medium coals on both sides until golden brown and the cheese is oozing.
    5. If you’re making them on the stovetop, cook in a cast-iron pan over a medium heat. Finish off in the oven if the cheese is not fully melted.

  • Smoked snoek braaibroodjies

    We South Africans love our braaibroodjies. And we love snoek. Makes sense to combine them, no? Which is just what baker extraordinaire, Fritz Schoon of the Schoon bakery empire, has done.

    Ingredients:

    • 300 g smoked snoek
    • 6 spring onions
    • 1 clove garlic
    • 2 T fresh coriander chopped
    • 2 T Italian parsley chopped
    • 3 T olive oil
    • Sea salt and freshly ground black pepper, to taste
    • 1½ T apricot chutney
    • 2 t butter
    • 4 slices Schoon Corn Porridge bread (or firm, thickly sliced white bread)

    Method:

    1. Flake the snoek and remove the bones.
    2. Chop the spring onions, garlic, coriander and parsley together and mix in the olive oil.
    3. Mix with the snoek and season to taste.
    4. Spread one side of each slice of bread with apricot chutney and make sandwiches with the snoek mixture.
    5. Butter the outside of the sandwiches and braai until crispy.

  • Bacon-wrapped braaibroodjie

    Once more for the people in the back: this braaibroodjie is wrapped in bacon. And it is a GAME CHANGER.

    Ingredients:

    • 4 ciabatta rolls
    • Cheddar cheese, sliced
    • 2 t sweet chilli sauce
    • Streaky bacon

    Method:

    1. Fill ciabatta sandwiches with thickly sliced Cheddar and 2 t sweet chilli sauce.
    2. Wrap in par-cooked streaky bacon, secure with soaked toothpicks and braai until crunchy.
