5-INGREDIENT DINNERS YOU CAN MEMORISE

Pantry and fridge looking a little bare? You’ve got this. You don’t need a fully-stocked lardar to whip up a delicious dinner. Take your pick from these recipes that require only five ingredients – or less!
  • Baby potato salad with basil pesto

    Microwave 1 x 350 g bag Woolworths baby garlic and herb butter potatoes until tender. Halve and toss with 2 T basil pesto, 100 g Woolworths smoked snoek flakes and shredded purple cabbage.

  • Chicken escalope with roasted tomatoes

    Preheat the oven to 180°C. Using a rolling pin, flatten 3 chicken breasts between 2 sheets of clingwrap. Season each breast to taste and pan-fry in 2 T sunflower oil until browned on both sides. Place the chicken breasts on a baking tray and top with 4 ripe tomatoes (cut into quarters) and 150 g bocconcini. Drizzle with the extra virgin olive oil and season to taste. Roast for 30 minutes. Garnish with fresh basil leaves.

    Cook's note: you can use regular mozzarella in place of the bocconcini.


  • Fillet steak in pomegranate sauce

    First, gather your ingredients together: 800 g beef fillet, at room temperature; 3 T butter; 1 cup pomegranate concentrate; 200g Danablu cheese and pomegranate rubies, to garnish.

    Rub the steak with the butter and allow to rest for 10 minutes, then place in a dry pan over a high heat. Sear the steak evenly all over to form a caramelised crust. Add the pomegranate concentrate and reduce the heat to medium. Turn the steak to coat it in the juice, then remove it from the pan and set aside. Remove the pan from the heat. Allow the fillet to rest for 5 minutes, then slice it. Return to the pan and add the blue cheese, allowing it to melt over the steak.

    Serve with freshly ground black pepper and garnish with pomegranate rubies.
