Tonnato dip

INGREDIENTS
2 x 170 g Woolworths Light Meat Tuna Shredded with Vegetable Oil
1 t Woolworths Medium Capers in Vinegar
1 clove garlic, crushed
½ cup Woolworths Tangy Mayonnaise
4 T Woolworths Mediterranean Extra Virgin Olive Oil
Juice 1 lemon
2 Woolworths Anchovy Fillets in Sunflower Oil
Serving suggestion:
Baby vegetables
Crackers and Melba toast
Toasted baguette
Capers
Chopped parsley
Lemon zest
INSTRUCTIONS
Drain the oil from the tuna tins and place the tuna in a food processor or blender.
Add the remaining ingredients to the blender and blend until smooth.
Scoop the dip onto a serving platter and top with extra capers, lemon zest and chopped parsley.
Serve with crackers of your choice, melba toast or toasted baguette.

For the salmon spread:
100 g Woolworths Oak Smoked Salmon Ribbons or Trout
6 Woolworths Caper Berries in Vinegar, plus extra to serve
100 g Woolworths Plain Medium Fat Cream Cheese
250 ml Woolworths Sour Cream
Zest 1 lemon
¼ cup Woolworths Mediterranean Extra Virgin Olive Oil
5 g fresh dill, plus extra to serve
INSTRUCTIONS
To make the quick pickle, slice the onions thinly and place them in a small bowl. Add the lemon juice as well as the salt, using your hand, massage the lemon juice and salt into the onions. Leave the onions to stand at room temperature for 10 minutes.
For the salmon spread, place all the ingredients in a blender or food processor and blend until smooth.
Spoon onto a platter and spread out. Garnish with the pickled onions, caperberries, and fresh dill. Serve with crackers of your choice or toasted baguette.
