Sadie's 15-minute butternut soup with crunchy pita chips

"Woolies' butternut soup is delicious served with quick toasted pita croutons, seasoned with sumac, zatar, green chilli and garlic."

INGREDIENTS

  • 2 x 600 g Woolies butternut soup
  • a splash of cream

For the pita chips:

  • 8 mini pita breads, cut into wedges
  • 4 T olive oil
  • 3 cloves garlic, finely chopped
  • 1 green chilli, seeded and roughly chopped
  • 1 T za'atar blend (or to taste)
  • 1 tsp sumac (or to taste)

 

METHOD

  1. Heat the soup according to package instructions. Preheat the oven to 180º C
  2. To make the pita chips, place all the ingredients in a bowl and toss until well coated.
  3. Layer the pita chips on a baking tray and bake in for 5 minutes or until crisp and golden.
  4. Serve the chips with the butternut soup, garnished with a drizzle of cream, pumpkin seeds and dried chilli.
