Champagne jelly for the ultimate cheeseboard

Ingredients:
750 ml MCC or sparkling wine
7 t gelatine powder
2 T water
½ cup white sugar

Method:
- In a large sauce pan, add 2 cups of the sparkling wine and the sugar.
- Mix the water and gelatine and allow to bloom for a few minutes.
- Place the saucepan with the MCC on a medium heat and allow to simmer. Stir until the sugar has dissolved.
- Melt the gelatine mixture in the microwave for 10 seconds. Add this to the warm sparkling wine and stir to dissolve. Add the remaining sparkling wine. Stir through and pour into chosen moulds.
- Place in the fridge and allow to set over night. Serve with a variety of cheeses – the Woolworths Cheesecake tower, aged gouda and Botham’s blue for example. Serve the board with crackers, onion marmalade, nuts drizzled with honey, sliced nectarines, fresh blueberries and some lovely local MCC* in the glass.
