Lazy Makoti's Mother's Day Brunch
The Lazy Makoti is serving up the most delicious way to say “I appreciate you” this Mother’s Day. 💐 From moms to grannies to the women who feel like home, she’s sharing two easy, delicious brunch recipes perfect for celebrating the ones who do it all.
Air fryer egg Croissants:
Ingredients:
- 4-5 WW Croissants
- 6 Eggs, beaten
- 1 Red onion, finely chopped
- 1/2 cup diced Bacon
- 1/4 Red pepper, finely chopped
- 1 cup Spinach, chopped
- Salt & Black Pepper to taste
- Cheese, grated
Cooking instructions:
- In a pan, sauté the chopped bacon, red pepper, and onion until the bacon is crispy and veggies are tender.
- Stir in the spinach to cook to wilt, 1 minute. Remove from heat and add to a bowl with the beaten eggs. Season with salt and black pepper. Mix well.
- Use a knife to remove the very insides of the croissant but leaving high edges to keep the egg mixture from falling out.
- Place the carved-out croissants in the air fryer.
- Use a ladle to fill each croissant centre with the egg mixture. Add cheese, if desired.
- Bake in air fryer or oven for 20 minutes till egg is cooked and set
- Enjoy warm and garnish with herbs
Rosemary Maple Pork Grillers:
Ingredients:
- 2 tablespoon Olive Oil
- 6-8 WW Smoked cheese and bacon pork griller*
- 2 tablespoon Maple syrup
- 2 tablespoon Rosemary, finely chopped
Cooking instructions:
- Heat oil in a pan and fry the pork sausages on both sides till cooked then turn off heat.
- Once cooked stir in the maple syrup and rosemary and serve warm
