Caramelised nectarines with homemade caramel and ice cream

Caramelised nectarines with homemade caramel:

Ingredients:
- 4 T Woolworths Light Brown Sugar
- 3 T salted butter
- 4 FLAVOURBURST™ white nectarines, halved with the stone removed
- 3/4 cup whipping cream or pouring cream
- 400 g Woolworths Vanilla Flavoured Dairy Ice Cream
- 4 T Woolworths Raw Flaked Almonds, toasted
- 1 FLAVOURBURST™ white nectarines, frozen whole (optional)
Cooking instructions:
- Add the sugar and butter to a pan over a medium heat. Once the butter has melted and begins foaming add the nectarines cut side down to the pan. Cook them for 5 minutes or until the flesh becomes caramelised taking on a golden brown colour.
- Remove the nectarines from the pan and set aside before adding the cream to the pan and reducing to low. Continuously stir until a smooth caramel forms, then remove from the heat.
- Add a generous scoop of ice cream to each serving glass followed by 2 halves of nectarines. Spoon over the caramel and finish with the toasted almonds.
- As an options, finely grate frozen nectarine over the dessert for a frozen element, making this a texture and temperature sensation of a dessert.
