We’re taking advantage of Woolies’ new everyday lower price on all schnitzels and cooking up a quick, easy and most importantly, delicious midweek dinner.
We’ve used the crumbed beef schnitzel, but it would be equally as delicious using the chicken, hake, pork or turkey schnitzel, oh and there’s a gluten free schnitzel too!

Beef Schnitzel with garlic fried broccoli rice
Serves 4
INGREDIENTS
Woolies crumbed beef schnitzel
4T Woolies Asian Korean Style BBQ sauce
For the spicy rice
230g Tenderstem® Broccoli
Salt to taste
3T sunflower oil
2t crushed garlic
2 x Woolies fully cooked brown rice
2T Asian spicy chilli crisp with fried black beans
For the lime pickled veggies
2 large carrots, thinly slide into strips
1 baby purple cabbage, thinly sliced
1 jalapeno, thinly sliced
2 limes, juiced
Salt to taste
COOKING INSTRUCTIONS
- Place the schnitzel in an air fryer or oven to cook as per the instructions. While the schnitzel is cooking add the Tenderstem® broccoli to a pan with salt and just enough water to cover the bottom of the pan.
- Place on a high heat and cook until all the water has dissolved. Reduce the heat to medium and drizzle in the oil before adding the garlic and stir fry for 1 minute before adding the rice and spicy chilli crisp and stir fry for 2 minutes, ensuring the rice is coated in all the spicy chilli crisp. Season with salt to taste
- For the pickled veggies, simply add the carrots, cabbage, jalapeño and lime juice to a mixing bowl and season with salt before combining.
- Serve your spicy rice on a platter with the pickled veggies and the schnitzel which has been cut into chunky strips, finishing with a drizzle of the Korean BBQ sauce.
