What to eat with Diemersdal Sparkling Sauvignon Blanc.
When the WCellar team surprised Maylene Matthews, Senior Product Developer in the deli department, with a bottle of Diemersdal Sparkling Sauvignon Blanc, she knew immediately what its perfect food partner would be.
“A classic Sauvignon Blanc like this one is a great choice to serve with fish, and I decided it would be a lovely match for a summery salad of oak-smoked salmon ribbons with shaved fennel and celery, lettuce, cucumber ribbons, green tomatoes and fresh peas, accompanied by a sour cream dressing.
“Even before I started sipping, I was enticed by the green notes and fruit aromas in my glass. My scent memory went into overdrive trying to pinpoint everything from freshly cut grass to tropical fruit, and I was transported right back to my childhood summers and the ripe figs that grew on the tree in our garden. (Who knew a wine could make one feel younger and so wonderfully nostalgic?)
“The Diemersdal Sparkling Sauvignon Blanc is great with salmon in particular, as its tropical passionfruit aroma and zesty notes match the saltiness of the fish and add another layer of flavour to every bite. For me, the mineral character of this Sauvignon Blanc is increased in the sparkling version when I compare it to the still alternative.
“The bubbles of course provide a tiny explosion in your mouth and your experience of both the wine and salmon is elevated and prolonged… lingering longer.
“It is such a perfect match and an excellent wine to pop for any lazy summer lunch, especially when seafood tapas are on the menu.”
MAYLENE’S TOP PAIRING TIP
“I’m a fan of being able to identify the flavours on my plate and in my glass, and I like to see them as one ‘serving’. One should never overshadow the other.”
