6 Hearty recipes to cook with wine

When it's chilly out there, warm up with a comforting meal made using your favourite wine. From oxtail osso bucco to risotto alla Milanese, you'll love this winter cooking inspiration.

The first rule of cooking with wine? Only cook with one that you enjoy drinking. So start by measuring out how much you need to add to the pot, then pour yourself a glass and start chopping. Use wine for steaming, braising, roasting or deglazing, and you’ll find that the cooking process concentrates its fruitiness, sweetness and acidity, helping to deepen the flavours of the other ingredients, from vegetables to meat and seafood.

Beef Stew

This easy recipe served with mash or rice is a family-pleasing classic. It may take three hours to simmer the beef in the red-wine gravy, but that means there’s plenty of time to enjoy the rest of the Woolworths Signature Cabernet Sauvignon while you wait. Find the recipe here.

Seafood Chilli Cioppino

Chardonnay and seafood are a winning combination, and the Hartenberg Chardonnay stands up well to the tomato and hum of chilli in this dish. The lemon, lime and hints of vanilla in the wine are the perfect match for the prawns and kingklip. Find the recipe here.

Baked Chicken with Mushrooms and White Wine

You’ll be roasting the chicken in white wine – we recommend enjoying the rest of that bottle while the chicken cooks, then pouring Catherine Marshall Pinot Noir for your meal. Pinot and mushrooms are a match made in heaven, and now’s your chance to find out why. Find the recipe here.

Oxtail Osso Bucco

Traditional osso buco usually calls for veal knuckles or lamb cooked in dry white wine. This version comes with a twist. Use half oxtail and half beef chuck with a cup of rosé. Serve it with polenta or risotto and a glass of Bellevue Estate Shiraz – a great pairing with rich, meaty flavours. Find the recipe here.

Risotto Alla Milanese

Roasted marrow bones, pork bangers, saffron, chicken stock, white wine and Parmesan combine in this creamy risotto inspired by recipes cooked in Milan. Enjoy it with a bottle of chilled Fairview Roaming Goat Dry Rosé. It’s a dry, crisp wine with notes of strawberry and rose water, and will lift the flavours on your plate. Find the recipe here.

French Coq Au Vin

Bacon, mushrooms, shallots and two cups of dry red wine give this classic French dish its rich, deep flavour. The delicious spicy, fruity blend of Pinotage, Shiraz and Cabernet Sauvignon in the Warwick Cape Lady Cape Blend is your go-to for both the pot and your glass. Find the recipe here.
