Ostrich burger with spicy salsa:
Heat a non-stick pan over medium to high heat. Add 1 tablespoon of olive oil to the pan and fry the ostrich patties to your liking. Place on lightly toasted, brown seeded buns. To make the peach salsa; mix together 1 teaspoon of macadamia nut oil, 1 diced ripe peach, 1 tablespoon of roughly chopped fresh coriander, 50g roughly chopped cherry tomatoes, 1 finely chopped red chilli, and 1 tablespoon of red wine vinegar in a bowl. Scatter over the burgers and serve with baby leaves, and air-popped potato chips.
