This chicken satay is ridiculously delicious
Allow us to introduce your new favourite mid-week meal: chicken satay. It’s quick, it’s easy, it’s so delicious it seems almost illegal.
Chicken satay made easy:
Flatten 4 free range chicken breasts and dust in Woolworths Satay Marinade Powder. Set aside for 15 minutes to let the meat infuse. Heat a large frying pan and fry the chicken in a splash of olive or coconut oil, on both sides, until cooked through. Set aside.
To make the peanut sauce:
Pound 1 clove garlic and 1 teaspoon coriander seeds in a mortar and pestle until it forms a rough paste. Heat 1½ tablespoons olive oil in a frying pan and fry the spice paste until fragrant. Add 1 ½ tablespoons Blue Elephant Massaman curry paste and stir until fragrant. Add ¾ cup coconut milk and 2 tablespoons crushed peanuts. Reduce the heat and simmer for 5 minutes, stirring. Stir in 2 tablespoons brown sugar and remove from the heat. Serve the sauce with the fried chicken, along with sliced fresh cucumber, the pan juices from the chicken, and fresh mint. Yum!
