Cheat’s Christmas lunch
Step 1: Simmer for tenderness
Take one large Woolworths Beech-smoked Ready-to-cook Gammon and place it in a casserole. Add 1 bulb of sliced fennel or celery, quartered red onions and carrots. Top the gammon with water, cover with a lid and cook in the oven to simmer (at 180°C, for 25 minutes per 500g). Remove from the oven and drain the liquid. (Cook’s tip: Keep the liquid for delicious gammon stock for your next pea and ham soup or for risotto with leftover gammon)
Step 2: Score for success
Take the gammon, carefully peel away the rind of the fat and discard. Using a sharp knife, slice lines into the fat to score the gammon. Place a bed of purple cabbage wedges in a big casserole, then add 3–4 halved soft citrus, star anise, cinnamon sticks, honey and rosemary. Place the gammon on top, then roast for 20–30 minutes at 180°C.
Step 3: Glaze for glory
Brush on Woolworths Cranberry and Apple Shimmer Glaze every 5–10 minutes – for a gammon that will knock your socks off.
Easy Christmas pudding trifle
Warm a Woolworths Rich and Dark Brandy Fruit Pudding and crumble into dessert glasses. Top with fresh vanilla custard, whipped cream, melted white chocolate, blueberries and toasted flaked almonds. Dust with icing sugar and serve.
