Easy chicken pie: Rinse leeks well, peel carrots and wipe mushrooms. Shred up a rotisserie chicken. In a hot pan soften leeks in butter, add mushrooms and chicken. Add readymade gravy, a splash of cream, spinach and seasoning then simmer for about 10 minutes. Spoon mixture into ovenproof dishes. Unroll phyllo pastry and brush with melted butter. Scrunch phyllo pastry and cover the dishes. Bake at 200° C for 10 to 15 minutes. Serve pie with cooked carrots and peas.
