2 simple snacks for summer time

Summer time and the living is hot – which means no-one has time for hours in the kitchen. For some simple snacking, try these no-bake snack bars and a fast, refreshing fruit shake – they’re low input, high return…

No-bake popcorn snackbars

Pop 1/3 cup popcorn kernels, then combine with 1 cup rolled oats, ½ cup desiccated coconut and 1 cup dried fruit like cranberries. Melt 1 cup golden syrup, 1 cup brown sugar and 20 g butter. Pour this mixture over dry ingredients and combine well, taking care because the sugar will be hot. Spread into a baking tin and chill for 20 minutes or until set. Slice into bars – perfect for road trip snacks or lunch boxes.

After-school fruit shakes

Blend cubes of fresh watermelon with fresh strawberries, some strawberry yoghurt and ice until smooth. Pour into glasses and top with more berries. Enjoy!
