We all know that spinach is good for us (rich in iron and a great source of vitamin K, vitamin A, vitamin C, folic acid, manganese, magnesium and vitamin B2) but trying to convince the kiddos to eat it can be a challenge. 1. Spinach pancakes

Warm up some cheese sauce and defrost a few frozen pancakes. Wilt baby spinach in boiling water and add to the cheese sauce. You can even add some yummy extras like bacon or smoked salmon. Spoon mixture into pancakes and fold. Serve with roasted baby tomatoes.

2. Spinach smoothie

Blend baby spinach together with blueberries, apple, pineapple and some water or apple juice. Add some cocoa to make it look chocolatey.

3. Spinach omelette

Whisk and season eggs and pour into a hot pan. Add peas, baby spinach and serve topped with grated cheese.
