Super easy gluten free dosas

Wipe a non-stick pan with ghee (clarified butter). Make a batter by combining 150 g chickpea flour, 100 g rice flour, ½ teaspoon bicarb of soda, 2 tablespoons melted ghee and 1 ¾ cup of water. Add enough batter to the pan to thinly coat, then fry until bubbled and golden. Lift and serve with lentil dahl, sliced red onion, fresh coriander and chilli. 

Super yummy almond-crusted cheesecake

Mix 120 g almond flour with 6 chopped fresh dates, 1/3 cup rice flour and 1 free range egg yolk. Blend to make a dough, press into a greased tart case and bake at 150°C for 20 – 30 minutes. For the filling, combine 2 x 250 g tubs of medium fat cream cheese with 1 cup low fat yoghurt, 3 tablespoons honey, a squeeze of lemon juice, 1 tablespoon vanilla extract, and a pinch of salt. Fold and spread evenly over the crust. Chill overnight to set and cut into slim slices, serve with fresh berries or pomegranate rubies. Yum!
