Nacho average kids’ dinner

Sidestep the cheese-laden nachos and try these nacho baskets for a fresh new take on an old favourite. To add to their charm, it’s a great lunch or dinner sorted in less than 20 minutes, and bound to be a hit with the little ones.

Nacho baskets:

Take some multiseed wraps, cut in half, fold into a cone and stuff into a muffin tray. Bake at 180°C until golden and crisp. Pan fry free range mini chicken fillets in lemon juice and olive oil. When the baskets are ready, stuff them with lettuce, chicken fillets, low-fat plain yoghurt, tomato relish and fresh tomatoes. Other toppings that work well include sliced avocado and a light scattering of grated kJ-controlled mozzarella.
