A fresh take on coleslaw
Coleslaw is a staple braai side, and that’s no bad thing – veggies like cabbage contain vitamin C, which contributes to wellness. But it can sure do with an update, right? Try these deliciously light variations using fresh, seasonal fruit and veggies. And while you’re at it, ditch the heavy mayo and create yummy dressings with plain yoghurt, olive oil, lemon juice and vinegar.
Take inspiration from your favourite Woolies slaw:
1. Cabbage, green beans & fennel (185 g punnet): Combine freshly shredded green cabbage, with shaved green beans and shaved fennel. Add diced cucumber and drizzle with apple & mint vinaigrette.
2. Fresh broccoli stem & red cabbage (200 g punnet): Cut broccoli stems into matchsticks and combine with shredded red cabbage. Top with a light, creamy buttermilk dressing (the ‘new mayo’).
Or be creative and try your own:
Pretty in pink nectarine & radish slaw: Roughly chop 2 nectarines and top with 2 x 90 g sachets of Woolworths red onion pickled topper. Slice 6 radishes and add the juice of 1 lime. Add 1 tablespoon extra virgin olive oil. Finely chop 1 green bird’s eye chilli, and add it to the bowl, along with 2 sprigs of coriander, roughly chopped.
