Try this flavoursome prawn chaat for Eid lunch

This prawn chaat is quick to make and yet it wows with delicious flavours and vibrant colour – which makes it the perfect choice for Eid lunch.

Ingredients:

  • Oil, 2 T
  • Shallots, 1-2, chopped
  • Garlic, 2 cloves, chopped
  • Ginger, 3-5cm, peeled and grated
  • Woolworths Garam Masala Spice, 1 T
  • Mild curry powder, ¼ t
  • Coriander seeds, 1 t toasted
  • Cumin, ½ t toasted
  • Red chillies, 2, chopped
  • Canned tomatoes, 1 x 400 g can
  • Coconut milk, 1 x 400 ml can
  • Woolworths Frozen Large Tiger Prawns, 400 g box, thawed
  • Tomato paste, 1 T
  • Sea salt and freshly ground black pepper, to taste
  • Limes, to serve
  • Fresh coriander, to serve
  • Poppadums, to serve
  • Pomegranate, to serve
  • Sliced or pickled red onion, to serve

Method:

  1. Fry 4-6 deveined whole prawns in half of the oil and garam masala for 3-4 minutes until cooked through. Remove from the pan and set aside for serving.
  2. Soften the onions in a pan with oil for a few minutes before adding the garlic, ginger and spices for a few more minutes until fragrant.
  3. Add the chilli, canned tomatoes, tomato paste and coconut milk. Season and simmer for 20 minutes before adding the remaining cleaned prawns to simmer for 5 minutes, and poach in the sauce until cooked. Remove from the heat and serve immediately.
