Try this flavoursome prawn chaat for Eid lunch
This prawn chaat is quick to make and yet it wows with delicious flavours and vibrant colour – which makes it the perfect choice for Eid lunch.
Ingredients:
- Oil, 2 T
- Shallots, 1-2, chopped
- Garlic, 2 cloves, chopped
- Ginger, 3-5cm, peeled and grated
- Woolworths Garam Masala Spice, 1 T
- Mild curry powder, ¼ t
- Coriander seeds, 1 t toasted
- Cumin, ½ t toasted
- Red chillies, 2, chopped
- Canned tomatoes, 1 x 400 g can
- Coconut milk, 1 x 400 ml can
- Woolworths Frozen Large Tiger Prawns, 400 g box, thawed
- Tomato paste, 1 T
- Sea salt and freshly ground black pepper, to taste
- Limes, to serve
- Fresh coriander, to serve
- Poppadums, to serve
- Pomegranate, to serve
- Sliced or pickled red onion, to serve
Method:
- Fry 4-6 deveined whole prawns in half of the oil and garam masala for 3-4 minutes until cooked through. Remove from the pan and set aside for serving.
- Soften the onions in a pan with oil for a few minutes before adding the garlic, ginger and spices for a few more minutes until fragrant.
- Add the chilli, canned tomatoes, tomato paste and coconut milk. Season and simmer for 20 minutes before adding the remaining cleaned prawns to simmer for 5 minutes, and poach in the sauce until cooked. Remove from the heat and serve immediately.
