Breakfast routine feeling a bit meh? You’re going to LOVE this recipe for baked almond-and-berry oats, using your favourite dairy-alternative such as almond or coconut milk. It’s like having a warm, baked pudding for breakfast – but without the judgement.

Baked almond-and-berry oats

Serves 2 
Preparation: 5 minutes 
Cooking: 30 minutes 

Ingredients:

  • 160 g Woolworths Steel-cut or Rolled Oats
  • 1 t baking powder
  • 2 T maple syrup, plus extra for serving
  • 2 large free range eggs
  • 1 cup Woolworths Almond Milk
  • Handful each of raspberries and blueberries
  • Chopped almonds, for serving

Method:

  1. Preheat the oven to 180°C. 
  2. Place all the ingredients except the berries and almonds in a NutriBullet or blender and blend until the oats are smooth. 
  3. Divide the batter between greased ramekins or small ovenproof dishes, add the berries and top with the almonds. 
  4. Bake for 25–30 minutes, or until set and golden. Serve warm with a drizzle of maple syrup.
