Add avocado to your baking for great results

The mighty avocado is made for more than just toast or tacos – it’s also great for baking. It makes for a wonderfully moist cake if you add it to the batter, and a fantastically creamy icing on top. Try these delicious recipes.

Avocado and lime loaf cake with lime drizzle:

Preheat the oven to 180°C. Combine 210 g flour, 200 g sugar, 1 teaspoon bicarbonate of soda and ½ teaspoon salt in a bowl. Place 2 free range eggs, 1 cup mashed avocado, the zest of 2 limes, ½ cup avocado oil, ¼ cup buttermilk and 1 teaspoon vanilla extract in a separate bowl.

Whisk the wet ingredients, then stir into the dry ingredients. Do not over mix; stop mixing as soon as the two are combined. Pour the batter into a greased 20 x 11 cm loaf tin and bake for 1½ hours, or until a skewer inserted comes out clean.

Allow to cool. To make the drizzle, combine the juice of the 2 limes with 130 g icing sugar until smooth and thick, then pour over the loaf cake.

Creamy avocado frosting

This frosting would work well with a variety of fruit-driven cakes, like a banana cake or loaf, a beetroot cake or a citrus cake.

Place into a blender: 2 ripe avocados, 1 tablespoon cream cheese, 1 tablespoon coconut sugar, 1 teaspoon balsamic vinegar and 2 teaspoons lemon juice. Blitz until smooth.
