3 delicious avo picnic dishes

In the mood to soak up some sunshine with a picnic? Raise your picnic game by trying these 3 recipes, all made to showcase the creamy, nutty delight that is the Flavourburst™ GEM™ avo. They’re picnic perfect.


Avocado hummus:

For the creamiest avocado hummus dip, place the following in a blender and process until smooth: 400 g chickpeas (rinsed and drained), 2 diced GEM avocados, 1 garlic clove, 2 tablespoons lemon juice, 2 tablespoons olive oil, and freshly ground pepper and salt to taste. Serve with crunchy baby veggies for dipping.

Avocado pasta salad:

In a big bowl, combine: cooked pasta, a generous scoop of rocket pesto, sun-dried tomatoes, 1 diced GEM avocado, 1 wheel of feta (broken into pieces), a handful of rocket leaves, chopped roasted almonds, salt and pepper to taste, the juice of half a lime, and 2 tablespoons of olive oil. Toss to serve.

Avocado salad boats:

Halve 2 ripe GEM avocados and remove the stones. Fill each avocado with smoked trout ribbons, sliced radishes, scoops of chive-flavoured cream cheese and a few stems of watercress. Grab a spoon and dig in!
