2 wonderful ways with Flavourburst™ nectarines
One of the best things about summer is seasonal fruit, especially stone fruit. Case in point: these two delicious Flavourburst™ nectarine dishes – one a salad, one a dessert, both spectacular in their own ways.
Middle Eastern nectarine & grain salad
Cook 300 g pearl couscous to package instructions. Fluff and stir through half a tub Woolies’ fresh basil pesto. Make dukkah by crushing 3 T sesame seeds, 1 T cumin seeds, 100 g almonds and pistachios together. Slice ripe Flavourburst™ nectarines into slices and arrange on the grains, along with sliced red onion and avocado. Dust with the dukkah mix, sprinkle with crimson microherbs, drizzle with olive oil and enjoy! This salad is perfect with braaied prawns or roast chicken.
No-bake summer tarts
Crush 200 g ginger biscuits and fold through 120 g melted butter. Press into 4 individual springform tart moulds or ovenproof dishes to make a crust. Chill for an hour to set. In the meantime, whip 1 tub cream to soft peaks, with a dusting of icing sugar to taste. Fold through ½ cup thick plain yoghurt. Spoon this filling over the tart bases. Top with diced ripe Flavourburst™ nectarines, chopped fresh cherries, crushed pistachios and a drizzle of honey. Serve immediately.
