#EatWell Challenge: Tenderstem

If you’ve always had a hard time warming up to broccoli or any other green vegetable, we propose you try Tenderstem. It’s part of the same family as broccoli, Brussels sprouts, cauliflower and cabbage, and has a mild flavour. Tenderstem has a long, thin stem, unlike broccoli which is short, thick and has a woody flavour. 7 ways to enjoy Tenderstem:

  1. Lightly fry with garlic, drizzle lemon juice over the top and add shaved almonds.
  2. Make a salad with Tenderstem, sliced strawberries, watercress leaves, lightly roasted cumin seeds with a balsamic dressing.
  3. Blend with almonds, olive oil, garlic, Parmesan and lemon juice to make a pesto.
  4. Assemble a stack with layers of sweet potato and Tenderstem. Top with a poached egg.
  5. Sauté with onions, garlic and mushrooms, then add chicken stock and blitz with a hand blender for a yummy soup.
  6. Serve as a side with an Asian-style seared tuna steak.
  7. Dip in hummus and have it as a quick raw snack.
