This samp-and-beans recipe is totally moreish
And there’s a bit of spicy heat as well!

Spicy samp and beans
Serves: 4

Ingredients:
- 300 g samp, soaked overnight
- 200 g beans, soaked overnight
- 2 T chicken stock powder
- 2 T olive oil
- 1 onion, chopped
- 1 red pepper, chopped
- 6 garlic cloves, chopped
- 1 x 410 g can diced tomatoes
- 1 T smoked paprika
- 1 T smoked dried chilli flakes
- 1 cup chicken stock
- salt, to taste
- 100 g kale, chopped
Method:
- Drain the samp and beans and place in a large saucepan. Cover with water and add the stock powder. Simmer for 2 hours, or until soft. (You might need to add more water, but only stir a few times and gently.)
- Heat the oil in a large pan. Sauté the onion and pepper until soft. Add the garlic and cook for 2 minutes. Add the tomatoes, smoked paprika, chilli flakes and stock.
- Simmer for 10 minutes.
- Season to taste, add the samp and beans and stir through the chopped kale until wilted.
