This samp-and-beans recipe is totally moreish

Spicy samp and beans

Serves: 4
Preparation: 20 minutes, plus overnight soaking time
Cooking: 2 hours and 30 minutes

Ingredients:

  • 300 g samp, soaked overnight
  • 200 g beans, soaked overnight
  • 2 T chicken stock powder 
  • 2 T olive oil 
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 6 garlic cloves, chopped
  • 1 x 410 g can diced tomatoes 
  • 1 T smoked paprika
  • 1 T smoked dried chilli flakes 
  • 1 cup chicken stock 
  • salt, to taste
  • 100 g kale, chopped

Method:

  1. Drain the samp and beans and place in a large saucepan. Cover with water and add the stock powder. Simmer for 2 hours, or until soft. (You might need to add more water, but only stir a few times and gently.)
  2. Heat the oil in a large pan. Sauté the onion and pepper until soft. Add the garlic and cook for 2 minutes. Add the tomatoes, smoked paprika, chilli flakes and stock.
  3. Simmer for 10 minutes.
  4. Season to taste, add the samp and beans and stir through the chopped kale until wilted.
