There’s one sure-fire way towards good nutrition, and that’s making a variety of sustainable fruits and vegetables part of your diet. This week, we’ve got our eye on the humble banana and really, what’s not to love? They’re sweet, creamy and low on fat, which makes it the perfect on-the-go snack. But don’t stop there – the banana really shines in easy dishes like smoothies, simple baked treats, and a hot oats brekkie to power up your day.

  1. Arrange sliced bananas on baking paper and freeze. Once frozen, pop the bananas into a blender along with fresh berries, and a scoop of yoghurt. Blend until creamy and voila, instant froyo!
  2. Cream 180 g brown sugar and 125 g butter. Sift in ¼ tablespoon baking powder and 210 g flour. Add two eggs and fold, followed by 4 mashed bananas, 100 g desiccated coconut and ¼ cup maple syrup. Mix well and spoon the batter into a greased medium loaf tin. Sprinkle with coconut, and bake at 160°C for 1 hour until skewer comes out clean. Slice and eat warm. Try not to drool.
  3. Cook oats in water and add milk to taste once the oats have swelled. Enjoy with sliced bananas, milk, and a drizzle of maple syrup. Now that’s a power breakfast.
