This condensed-milk potato salad is the bomb

Question: is it even a real braai if there’s no potato salad? Answer: don’t ask unsettling questions. Just make the potato salad, and better yet, make it with condensed milk, just like your ouma did.

Ingredients:

  • Potatoes (the Nicola Mediterranean potatoes  work best): 1.5 kg
  • Mayonnaise: ½ cup
  • Condensed milk: ¼ cup
  • Mustard powder: ½–1 teaspoon (to taste)
  • Red salad onions: ¼ cup, finely chopped
  • Radishes: 4, thinly sliced (optional)
  • Micro herbs, to garnish

Method:

  1. Boil the potatoes for 20 minutes until cooked but not mushy. Leave to cool, then remove the skins.
  2. Cut each potato into 3 pieces and set aside.
  3. Mix the mayonnaise, condensed milk, mustard powder and onion and pour over the potatoes.
  4. Garnish with the radishes and micro herbs.
