This condensed-milk potato salad is the bomb
Question: is it even a real braai if there’s no potato salad? Answer: don’t ask unsettling questions. Just make the potato salad, and better yet, make it with condensed milk, just like your ouma did.
Ingredients:
- Potatoes (the Nicola Mediterranean potatoes work best): 1.5 kg
- Mayonnaise: ½ cup
- Condensed milk: ¼ cup
- Mustard powder: ½–1 teaspoon (to taste)
- Red salad onions: ¼ cup, finely chopped
- Radishes: 4, thinly sliced (optional)
- Micro herbs, to garnish
Method:
- Boil the potatoes for 20 minutes until cooked but not mushy. Leave to cool, then remove the skins.
- Cut each potato into 3 pieces and set aside.
- Mix the mayonnaise, condensed milk, mustard powder and onion and pour over the potatoes.
- Garnish with the radishes and micro herbs.
