We’re making coffee-flavoured French toast.
This one’s for the coffee lovers. We’ve given French toast the caffeine treatment. Just go ahead and file this under: a very good idea.
To make coffee syrup:
Add ½ cup freshly brewed black coffee and 200 g sugar to a saucepan and simmer for 15–20 minutes until syrupy. Leave aside to cool slightly.
To make the French toast:
Brew another ½ cup of coffee and add ½ cup milk and 3–4 teaspoons sugar. Stir and set aside. Lightly whisk 4 free range eggs and add the coffee to it. Soak 8 slices of firm white bread in the mix, then fry on both sides over medium heat in a dash of oil and a small nob of butter, until golden brown and crispy. Dust the toast with icing sugar, add a scoop of vanilla ice cream and drizzle with the warm coffee syrup. Enjoy with a fresh cup of warm coffee (just in case you haven’t had enough coffee.)
