We’re making hot cross bun French toast
Here’s something you probably didn’t know about hot cross buns – they make for excellent French toast! We give you a sweet and a savoury version – you can decide which one is best, but we love both.
The basic French toast batter:
Beat together 4 free range eggs and ½ cup of milk. Dip the hot cross buns in the batter to coat – not for too long, or they will go soggy. Try the standard or spicy hot cross buns for a savoury French toast, or the chocolate hot cross buns for a sweet version. Fry the buns in a lick of olive oil and butter until they have a golden brown crust.
Savoury version:
Serve the battered hot cross bun with cream cheese, smoked salmon or trout, thinly sliced red onion and cucumber slices.
Sweet version:
Caramelise sliced nectarines in sugar and a squeeze of lemon juice until soft and tender. Serve on battered chocolate hot cross buns with double thick cream and a dusting of icing sugar. Enjoy!
