This malva pudding is the perfect wintry treat

There’s no denying that the season for warm, steamy winter puddings has arrived – so feast your eyes on this, the queen of the winter dessert: a classic malva pudding to warm your belly.

Serves 6  
Preparation: 20 minutes  
Cooking: 40 minutes 

Method:

  1. Preheat the oven to 180°C. Beat the sugar and eggs until creamy, then add the jam. 
  2. In a separate bowl, mix the butter, vinegar and milk. Combine the dry ingredients. Add the vinegar mixture to the egg mixture a little at a time, alternating with the dry ingredients. Beat well to combine. 
  3. Pour into a greased 31 x 21 x 5 cm baking dish and bake for 35–40 minutes, or until golden brown and spongy in the middle. 
  4. Meanwhile, make the sauce. Heat the cream, butter, sugar and reserved apricot syrup. Simmer for 2 minutes, then pour over the pudding as soon as it comes out of the oven. Allow to cool slightly and for the sauce to soak into the sponge. Serve with custard and warmed canned apricots.

  • 1 T apricot jam 
  • 2 T butter, melted 
  • 1 T vinegar 
  • ½ cup milk 
  • 175 g cake flour 
  • ½ t bicarbonate of soda 
  • a pinch of salt 
  • Woolworths Vanilla Flavoured Custard, for serving 
  • 1 x 410 g can Woolworths Apricot Halves, warmed, for serving

For the sauce: 

  • 1 cup cream 
  • 115 g butter 
  • 60 g sugar 
  • ½ cup reserved canned apricot syrup (or brandy)
