You HAVE to try this rose & pistachio layer cake
This rose and lemon cake is the perfect dessert. It’s pretty, it’s got rose-flavoured cream cheese icing AND chopped pistachios AND you top it with Turkish delight. Plus, it’s made with Woolies Vanilla Cake Mix, just to give you a bit of a head start.
Rose & pistachio layer cake
- Prepare Woolworths Vanilla Cake Mix according to the package instructions. Mix in the zest of one lemon. (We used two boxes of cake mix, it can deliver two big layers or three smaller layers, depending on your preference or the size of your cake tins.)
- To make the icing, beat 500 g full-cream cream cheese. Gradually add 50 g sifted icing sugar, 2 t rose water, 1 t pink food colouring and the zest of 1 lemon.
- Once the cakes have cooled, decorate with the rose cream cheese icing.
- Top with chopped pistachios, Turkish delight and edible flowers.
