These Dalgona-filled doughnuts are beyond delicious

There are doughnuts, and then there are homemade doughnuts filled with Dalgona coffee cream, as shared by Zorah Booley of the blog ‘In the Midnight Kitchen’. Trust us, you’re going to want to try this!

Ingredients:

For the doughnuts:

  • 1 ½ cups milk
  • ½ cup white sugar
  • ⅓ cup butter, cubed
  • 3 T hot water
  • 3 T lukewarm-cold water
  • 2 t instant yeast
  • 2 eggs, beaten
  • 6 cups of All Purpose Flour, extra for dusting
  • 1 t cinnamon powder
  • 3 cups vegetable oil, for frying

Dalgona coffee:

  1. 3 T white sugar
  2. 2 T instant coffee
  3. 2 T cold water

For the coating:

Method:

  1. In a small pot, add the milk, sugar and butter and allow the milk to simmer. Once the butter has fully melted and the sugar has dissolved, remove from the heat.
  2. In a small bowl, add the water and then the yeast. Whisk with a fork to combine and then set aside to bloom for 10 minutes. It should look murky and a bit foamy after 10 minutes.
  3. In a stand mixer, add the milk mixture and yeast and using a whisk attachment, whisk to combine (about 2-3 minutes). Add the eggs and combine. Then add in the flour and cinnamon in two batches. Make sure to scrape down the sides so everything gets mixed together.
  4. Switch out the whisk attachment for the dough attachment and set the speed to low-medium. Allow it to knead the dough for 10 minutes.
  5. Place the dough in a greased bowl (using olive oil), cover with cling film and leave in a warm place for 1.5 hours.
  6. Once the dough has risen, punch it down, remove as much air as possible. Roll it out to 4-6cm thickness, and using a round cookie cutter, or a glass, make as many doughnut shapes as you can.
  7. Place the doughnut rounds on a tray lined with parchment paper. Cover loosely with a clean kitchen towel and allow to rise again for 40 minutes.
  8. In a small pot, allow the vegetable oil to come to a simmer. Set the stove to a medium high heat. Test the heat by adding a piece of leftover dough, if the dough sizzles immediately it is ready and you can start frying off the doughnuts.
  9. Once the doughnuts have been fried off, place them on a plate lined with a serviette to drain excess oil. Toss in the cinnamon and sugar coating.

Dalgona coffee cream:

Add all the ingredients to a small bowl and whisk vigorously until the colour is a light cream and is very thick. If you are whisking by hand this could take about 10-15 minutes. Make a hole inside the doughnut, you can hollow a hole out using a small knife or a star nozzle. Fill with the Dalgona coffee and enjoy!
