Balmy berry days
1. Don’t let one bad berry spoil the bunch
Inspect your berries carefully and keep an eye on them. As soon as you notice one that’s mouldy or spoilt, toss it. Mould spreads easily and will quickly ruin the rest of the bunch.
2. Keep ‘em chilled
Berries are more delicate at room temperature, which makes them difficult to rinse, so chill before rinsing.
3. Splash don’t wash
Prevent berries from going soggy and losing flavour by rinsing just before use. And by “rinsing” we mean gently transferring them into a colander and splashing with cool water.
4. Storage is key
After rinsing, let them rest in a colander (not a bowl) in the fridge to allow air circulation.
5. Avoid the crisper drawer
The humidity’s usually higher in your fridge’s crisper drawer and there’s also less air circulation, so don’t keep your berries here if you want them to last longer.
Berrylicious flavour pairings: Pair cherries with banana, coffee, dark chocolate, lemon and vanilla. Strawberries love basil, black pepper, cream, goat’s cheese and lime. Raspberries are superb with ginger, olives, peaches, tomatoes, white chocolate and yoghurt.
