3 salad bases to last all week

Ain’t nobody got time to cook a different work lunch every day. Try these three simple salad bases and add fresh ingredients as you go. Trust us, it makes light work of lunch.

Our three starter ingredients:

1. quinoa

2. chickpeas

3. Woolworths cauliflower, broccoli and kale rice 

But first, make a delicious green goddess style dressing for all three:

Blend ½ an avocado, ½ cup low fat Ayrshire plain yoghurt, 2 tablespoons chopped parsley, 2 tablespoons chopped chives, 2–3 garlic cloves, the juice of 1 lemon, sea salt and freshly ground pepper.

Now for a little customisation:

Base 1: Cook the quinoa in boiling water until tender, and drain. Add the juice of half a grated beetroot for a pretty pop of pink colour.

Base 2: Combine the chickpeas with chopped cucumber, red onion and freshly chopped parsley.

Base 3: cauli-rice: Use Woolworths cauliflower, broccoli and kale rice and coat it in that green goddess dressing …

Finally, top with your favourite things, like:

Base 1: top with dill, goat’s cheese, mint and sprouts (also delicious in a sandwich)

Base 2: top with watermelon, exotic tomatoes and sprouts

Base 3: top with avo, feta and sprouts

Store in a jar for lunch and off you go!
