Try these crystal spring roll wraps

Summer calls for easy to eat, refreshing flavour combinations. These Vietnamese-inspired spring rolls tick all the boxes. They’re the ideal for a plant-based snack or even a light lunch.

INGREDIENTS:

  1. Woolworths Spelt and Barley: 250 g
  2. Woolworths Vietnamese Crystal Spring Roll Kit: 145 g
  3. Strawberries: 8, sliced thinly
  4. Sprouts: 150 g
  5. Radishes: 6, sliced thinly
  6. Edible flowers
  7. Onion seeds, to sprinkle
  8. Soy sauce or plum sauce, to serve

METHOD:

  1. Cook the barley and spelt as per packet instruction and leave to cool.
  2. Cook the vermicelli noodles as per packet instruction in the Vietnamese Crystal Spring Roll Kit.
  3. To assemble, soak the spring roll paper one by one in some cold water until soft.
  4. Fill the spring rolls with some barley and spelt, strawberries, vermicelli, sprouts and edible flours.
  5. Roll the spring rolls and sprinkle with the onion seeds.
  6. Serve with soy sauce or plum sauce.
