Try these crystal spring roll wraps
Summer calls for easy to eat, refreshing flavour combinations. These Vietnamese-inspired spring rolls tick all the boxes. They’re the ideal for a plant-based snack or even a light lunch.
INGREDIENTS:
- Woolworths Spelt and Barley: 250 g
- Woolworths Vietnamese Crystal Spring Roll Kit: 145 g
- Strawberries: 8, sliced thinly
- Sprouts: 150 g
- Radishes: 6, sliced thinly
- Edible flowers
- Onion seeds, to sprinkle
- Soy sauce or plum sauce, to serve
METHOD:
- Cook the barley and spelt as per packet instruction and leave to cool.
- Cook the vermicelli noodles as per packet instruction in the Vietnamese Crystal Spring Roll Kit.
- To assemble, soak the spring roll paper one by one in some cold water until soft.
- Fill the spring rolls with some barley and spelt, strawberries, vermicelli, sprouts and edible flours.
- Roll the spring rolls and sprinkle with the onion seeds.
- Serve with soy sauce or plum sauce.
