These light and bright popsicles make a fun, festive dessert

Ginger beer, non-alcoholic bubbles and fresh fruit are a match made for summer!

 

Bonus: the floral sugar will soon become your new party trick.

Ginger beer popsicles with non-alcoholic bubbles

Serves 4

Preparation: 10 minutes, plus overnight freezing time 

Ingredients:

  • 2 litres Woolworths Sparkling Ginger Flavoured Drink
  • 250 g sugar
  • 1 x 10 g Woolworths Edible Exotic Flowers 
  • Pomegranate rubies, to garnish
  • 160 g raspberries
  • 250 g strawberries
  • 2 blood oranges (or regular oranges)
  • 1 x 750 ml bottle Woolworths De-Alcoholised Sparkling Rose
  • Mint, to garnish

Cooking instructions:

  1. The night before you want to serve them, pour the ginger beer into popsicle moulds, place ice-cream sticks into each one and freeze.
  2. To make the floral sugar, blend the sugar and flower petals. 
  3. Remove the popsicles from the moulds and sprinkle over the sugar. 
  4. Place some pomegranate rubies, raspberries, strawberries, blood orange and mint into a glass, pour in the bubbles, add a popsicle and serve.
