This avo toast is a breath of fresh air

Give your standard avo toast a fresh lift with a dollop of salsa verde and a scattering of crumbled feta.

Avo toast with salsa verde

Serves 2 
Preparation: 5 minutes 

 

Ingredients:

For the salsa verde:

  • 3 spring onions, finely chopped
  • 10 g Italian parsley, finely chopped
  • 10 g dill, finely chopped
  • 1 clove garlic, crushed
  • 1 chilli, crushed
  • 1 lemon, juiced
  • 2–3 T light olive oil

For the toast:

  • 2 ripe avocados
  • Sea salt and freshly ground black pepper, to taste 
  • Ciabatta or sourdough toast, for serving 
  • Danish or plain feta, for serving

Method:

To make the salsa verde, mix all ingredients together. Spread the avo onto the toast and season to taste. Drizzle generously with salsa verde and scatter with crumbled feta
