This avo toast is a breath of fresh air
Give your standard avo toast a fresh lift with a dollop of salsa verde and a scattering of crumbled feta.
Avo toast with salsa verde

Ingredients:
For the salsa verde:
- 3 spring onions, finely chopped
- 10 g Italian parsley, finely chopped
- 10 g dill, finely chopped
- 1 clove garlic, crushed
- 1 chilli, crushed
- 1 lemon, juiced
- 2–3 T light olive oil
For the toast:
- 2 ripe avocados
- Sea salt and freshly ground black pepper, to taste
- Ciabatta or sourdough toast, for serving
- Danish or plain feta, for serving
Method:
To make the salsa verde, mix all ingredients together. Spread the avo onto the toast and season to taste. Drizzle generously with salsa verde and scatter with crumbled feta.
