Get a load of this giant cookie cake
Introducing your next party trick (for an actual party): a giant cookie cake. As in: a cake made from giant cookies. (Yes. Yes we did.)
Giant cookie cake:
Giant butter biscuit:
Preheat oven to 180°C and lightly grease a baking tray. Cream 180 g unsalted butter and the sugar from Woolworths Butter Biscuit Mix together until creamy and pale in colour. Gently fold in the rest of the mix from the box and blend to form a soft dough. Sprinkle with colourful sprinkles for a funfetti cookie. Cover and refrigerate for 30 minutes. Roll the dough into an oversized circle. Place in the centre of the oven and bake for 20 minutes or until golden brown and almost firm to touch. Remove from oven and place on a wire rack to cool.
Giant chocolate chip cookie:
At the same time as making the butter biscuit, bake your chocolate chip cookie. Cream together 60 g unsalted butter with the sugar from one pack of chocolate chip cookie mix. Add one medium egg and beat well. Add the contents of and mix until combined. Roll into a ball and press down lightly. Bake at 180°C for 20–25 minutes until soft and chewy. Remove from the oven and place on a wire rack to cool.
To build the giant cake:
Sandwich the two layers together with your favourite butter icing to make a giant cookie cake. For a bigger cake, bake more versions of each cookie. Drizzle with melted chocolate and serve with some bubbles.
