This banana-and-yoghurt tray bake is a total treat
You’ve made banana loaf, but have you ever made a banana-and-yoghurt tray bake? Perhaps it’s time you try, because this baked treat is going to go down a treat with the kids.
Banana-and-yoghurt tray bake
Makes 1 large tray

Ingredients:
- 4 large free-range eggs
- 1 cup coconut oil, melted
- 2/3 cup honey
- ½ cup plain yoghurt
- 1½ t vanilla extract
- 1¾ cups flour
- 1 t ground cinnamon
- 2 t bicarbonate of soda
- 1 t salt
- 2 cups mashed banana
- 100 g flaked almonds
- 3 bananas, to decorate
Method:
- Grease and line a 35 x 29 x 4 cm baking tray. Preheat the oven to 180°C.
- Combine all the wet ingredients, except for the mashed banana.
- Combine all the dry ingredients (except for the flaked almonds) in another bowl, then carefully fold them into the wet ingredients.
- Incorporate the mashed banana into the batter and spoon into a shallow baking tray – smooth the top using a spoon.
- Slice the bananas in half lengthways and gently press into the surface of the cake.
- Sprinkle with almonds or your choice of crushed nuts.
- Bake for 35–40 minutes until a skewer comes out clean. Allow cooling in the tray. Slice into squares and store an airtight container to keep fresh for longer.
