This banana-and-yoghurt tray bake is a total treat

You’ve made banana loaf, but have you ever made a banana-and-yoghurt tray bake? Perhaps it’s time you try, because this baked treat is going to go down a treat with the kids.

Banana-and-yoghurt tray bake

Makes 1 large tray  
Preparation: 30 minutes  
Cooking: 40 minutes

Ingredients:

  • 4 large free-range eggs  
  • 1 cup coconut oil, melted
  • 2/3 cup honey 
  • ½ cup plain yoghurt
  • 1½ t vanilla extract 
  • 1¾ cups flour
  • 1 t ground cinnamon 
  • 2 t bicarbonate of soda  
  • 1 t salt 
  • 2 cups mashed banana
  • 100 g flaked almonds  
  • 3 bananas, to decorate
     

Method:

  1. Grease and line a 35 x 29 x 4 cm baking tray. Preheat the oven to 180°C. 
  2. Combine all the wet ingredients, except for the mashed banana.
  3. Combine all the dry ingredients (except for the flaked almonds) in another bowl, then carefully fold them into the wet ingredients. 
  4. Incorporate the mashed banana into the batter and spoon into a shallow baking tray – smooth the top using a spoon. 
  5. Slice the bananas in half lengthways and gently press into the surface of the cake.
  6. Sprinkle with almonds or your choice of crushed nuts. 
  7. Bake for 35–40 minutes until a skewer comes out clean. Allow cooling in the tray. Slice into squares and store an airtight container to keep fresh for longer.
