Homemade LemonGold® cordial and ClemenGold® curd

These citrus delights are great gifts or pantry basics.

LemonGold® cordial

Easy   
Makes: 600 ml   
Preparation time: 10 minutes   
Cooking time: 20–25 minutes

INGREDIENTS

8 Seedless LemonGold® Lemons, juiced and zested  
2 cups White sugar  
1 Cup water  
Soda water to serve  
Mint to serve  
LemonGold® wedges to serve

COOKING INSTRUCTIONS

  1. Place the LemonGold® juice and zest into a medium pot along with the water and sugar.
  2. Place the pot onto the heat and bring to the boil, stirring until the sugar has dissolved.
  3. Reduce the heat to a simmer and simmer for 20–25 minutes or until the cordial has reached a thin syrup consistency.
  4. Remove the pot from the heat and allow the cordial to cool completely before storing it in an airtight jar or bottle.
  5. Store the cordial at room temperature for up to 2 weeks. Once opened, store in the fridge. Serve with sparkling water or soda water and fresh mint and LemonGold® slices.
  6. Serve according to your taste. 

Serving suggestion – 2 T cordial to 250 ml soda water.

ClemenGold® curd

Makes: 250 ml  
Preparation time: 5 minutes  
Cooking time: 10–15 minutes

INGREDIENTS

⅔ cup Easy to Peel ClemenGold® Mandarins, juiced  
4 Seedless LemonGold® Lemons, zested  
1 lemon, zested and juiced  
85 g Woolworths Salted Butter, cubed  
2 Woolworths Free Range Large Egg yolks  
2 Woolworths Free Range Large Egg  
110 g Woolworths Castor Sugar  
Pinch salt

COOKING INSTRUCTIONS

  1. Place the sugar and zests into a bowl and rub between your fingers to infuse the citrus into the sugar and enhance the flavour.
  2. Place all the ingredients into a blender and blend on high until smooth.
  3. Transfer the contents of the blender to a saucepan and cook over low heat, stirring constantly until the curd has thickened and coats the back of a spoon.
  4. You can also do the taste test and check if all the raw egg flavour has cooked out.
  5. Transfer the curd to a bowl and cover with cling film. Refrigerate until cool. Transfer the cooled curd into an airtight jar and store in the fridge for up to one week. Serve the ClemenGold® curd on top of scones with cream, or use for filling the centre of a cake.
