Try these yummy mini sweet potato “pizzas”
Stuck on what to feed the kids for dinner? (You can only eat so many schnitzels, after all.) These mini sweet potato “pizzas” will go down a treat with young and old.

Ingredients:
- 4 sweet potatoes, sliced into 1.5 cm discs
- 2 T olive oil
- Sea salt and freshly ground black pepper, to taste
- 120 g sun-dried tomatoes
- 100 g ready-to-eat smoked ham
- 70 g sliced classic salami
- 150 g mozzarella cheese slices
- Grated Parmesan, to serve
- Fresh basil, to serve
Method:
- Preheat the oven to 180°C.
- Place the sweet potato on a lined oven tray, drizzle with olive oil and season with salt and pepper. Roast for 20 minutes, or until tender.
- Add the toppings, starting with the sun-dried tomatoes, then the ham, salami, mozzarella and bake again until bubbly and golden.
- Serve hot with grated Parmesan and fresh basil.
Other topping ideas: you could also use basil pesto, Cheddar cheese, artichokes, charred baby marrow ribbons, mushrooms, feta, avocado, caramelised onions, Woolworths Onion Sprinkles and olives.
