1. The freeze

Got a lot of avocados that ripened at the same time and don’t want to lose all that deliciousness? Simply mash them, press into ice cube trays and freeze for later use. They’re perfect for smoothies like this one: place 1 banana, frozen avo ice cubes to the size of ½ avocado, a handful or two of baby spinach and ½ cup almond or oat milk in a blender. Blend until smooth – add a drizzle of honey or a sprinkle of cocoa powder if desired.

2. The pickle

Yes, you can pickle avocados! They’re fantastic added to salads or any Mexican-inspired dish such as chilli con carne, fajitas or a simple crispy tortilla. Place 3 sliced or quartered avocados, 2 cloves garlic, 1 t crushed chilli, 5 g fresh coriander and 200 ml Woolworths Pickling Condiment in a sterilised jar. Chill for a few hours (or overnight), and serve with a fried egg and crispy tortilla, chopped red onion and fresh coriander.

3. The stretch

Need to stretch your guacamole? Add some plain yoghurt – it will also give the dish a lovely creamy tang. Combine 1 cup yoghurt with 3 mashed avos, sea salt and freshly ground black pepper to taste, fresh coriander, spring onions and chilli to taste. Finish with a good squeeze of fresh lime or lemon juice.
