Quick-and-easy prawn curry for the win

Ingredients:
- 2T Woolworths Ghee
- ½ onion, chopped
- 1 t minced fresh ginger
- 1 t minced fresh turmeric
- 2 t minced garlic
- 1 x 50 g sachet Woolworths Vindaloo Curry Paste
- 1 x 410 g can diced tomatoes
- 1 cup fish stock
- Woolworths Organic Large Black Tiger Prawns 320g
- Salt, to taste
- coriander, to garnish
- Poppadoms and coconut rice, for serving
Method:
- Heat the ghee in a pan. Sauté the onion over medium heat until soft and golden.
- Add the ginger, turmeric and garlic. Cook for 1 minute.
- Stir in the curry paste and cook for 1 minute.
- Add the tomatoes and stock and simmer for 10 minutes.
- Season to taste, then add the prawns. Cover and simmer for 10 minutes. Serve with fresh coriander, warm poppadoms and coconut rice.
