Hearty Vegetable Soup with roasted chicken

Just because it’s winter doesn’t mean you can’t have impromptu dinner parties! Use Woolies soup and elevate it with sides for a party your guests won’t soon forget.

Hearty Vegetable Soup with roasted chicken

Ingredients:

  • 1 x 600 g Hearty Vegetable Soup Mix
  • 900 g free range chicken drumsticks and thighs
  • 2 T olive oil
  • Salt and freshly ground pepper to season
  • 6 pk Heat & eat Portuguese rolls

Cooking instructions:

  1. To prepare the chicken: Toss with olive oil and season. Place skin side up in a preheated airfryer at 200°C. Cook for 15 minutes, turn over and cook for another 15 minutes. 
  2. Prepare the soup as per the pack directions. 
  3. Blend half until smooth and pour back into the remaining soup.
  4. Add the chicken pieces and serve in warmed bowls with heated Portuguese rolls.
