Hearty Vegetable Soup with roasted chicken
Just because it’s winter doesn’t mean you can’t have impromptu dinner parties! Use Woolies soup and elevate it with sides for a party your guests won’t soon forget.

Ingredients:
- 1 x 600 g Hearty Vegetable Soup Mix
- 900 g free range chicken drumsticks and thighs
- 2 T olive oil
- Salt and freshly ground pepper to season
- 6 pk Heat & eat Portuguese rolls
Cooking instructions:
- To prepare the chicken: Toss with olive oil and season. Place skin side up in a preheated airfryer at 200°C. Cook for 15 minutes, turn over and cook for another 15 minutes.
- Prepare the soup as per the pack directions.
- Blend half until smooth and pour back into the remaining soup.
- Add the chicken pieces and serve in warmed bowls with heated Portuguese rolls.
